In the kitchen, most often we do not use the full potential of nettles. Usually we prepare only herbal infusions or teas. In fact, nettle can become a real delicacy and the main character of many interesting and healthy dishes, if only we “open” to new flavors and combinations of various food products. We hope that today we will encourage you to several recipes, in which the nettle is the basis.
Full of valuable vitamins and minerals. Strengthen the body and give energy. Ideally suited for a spring dinner or a warm, light dinner.
– 3 liters of shoots and young leaves of nettle
– 1 can of coconut milk
– 3 liters of vegetable or vegetable-meat broth
– 2 onions
– 2 cloves of garlic
– rapeseed oil
– salt, black pepper
– toasts to be served
- Rinse the stinging nettles on the sieve. Peel onions, quickly chop and fry with chopped garlic cloves on 3-4 tablespoons of oil, salt at the end.
- Put the onion into a pot and add the broth. Bring to a boil. Stir the nettles on the boiling liquid. Cook about 15-20 minutes.
- Shred soup with a hand blender. Season with salt and pepper. Add coconut milk.
- Mix and cook for 5-10 minutes on low heat. Serve with croutons.
Pesto from nettles
Bit different from classic, but it tastes equally great! Such pesto served with pasta is a great idea for a healthy dinner. It also works well as an addition to vegetables or simply as a green sandwich for a sandwich. Pesto is also a large dose of healthy fatty acids!
– a handful of leaves of young nettle
– a handful of almonds without skin
– 1/2 glass of oil
– 2 tablespoons grated cheese parmigiano or a tablespoon of yeast flakes (inactive)
– 1 clove of garlic
– a pinch of freshly ground pepper
– teaspoon of soy sauce
– 1/2 a bundle of parsley
- Wash nettle and leave to drip. Crush the garlic and peel it. Treat the almonds in a pan until they become golden.
- Put all the ingredients in a high dish and blend with a blender. Prepared pesto is best left overnight until the flavors are chewed.
Refreshing cocktail for a spring dessert or an energy-hungry morning. A large portion of vitamins, ingredients and antioxidants in one glass! The cocktail is very easy to prepare, and its ingredients can be freely changed, depending on the imagination – try the version with coconut milk and banana or almond milk and peaches!
– 1 cup of chopped young nettle,
– 2 chopped sweet apples
– 1 ripe, peeled avocado
– 1 lemon juice
– water / milk
– honey to taste
- Mix all ingredients into a smooth cocktail using a bell blender. Adjust the density by adding the right amount of water.
