Pizza – nutritional values

Pizza is one of the most popular dishes in the world, but hardly anyone knows its properties, nutritional value and how many calories (kcal) there are: pizza, margarita, Hawaiian, vegetarian, four cheeses and salami, whether the pizza can be healthy.

Pizza is a cake made of yeast dough (from flour, water, yeast, oil, salt), covered with various additives, such as tomatoes, cheese, meat and cold meats, onions, olives, with the addition of herbs.

The history of pizza dates back to ancient times, the precursor of pizza was flat bread baked by the ancient Romans, called focaccia.

The first pizza recipe, reminiscent of today, was developed in Naples at the end of the eighteenth century, when tomatoes were added to focaccia and the pizza was mainly consumed in Italy after World War II was widespread in Europe and around the world by the Allies.

Contemporary Italians consider margherita pizza as true pizza (with tomato sauce, mozzarella and basil) and marinara pizza (with the addition of tomatoes, oregano, garlic and virgin olive oil).

Pizza dough differs in Italy depending on the region. In Naples soft and soft dough is preferred, thin and crunchy in Rome, and in Italy pizza is known for baking on rectangular trays with additives and sold by weight, so-called pizza al taglio.

Pizza – types and composition of pizzas

Contemporary pizza differs from the original one, which was invented in Italy. Currently, we can enjoy different variations of pizza

Neapolitan pizza – original thin-crust pizza. Today its two variants stand out

  • marinara pizza – contains tomatoes, garlic, oregano and virgin olive oil
  • margherita pizza – contains tomatoes, mozzarella slices, basil and virgin olive oil

Chicago pizza – pizza with a thick batter with convex edges, slices of mozzarella, meat, vegetables and tomatoes on top of the cake, ground beef, sausage, pepperoni, onions, mushrooms and green peppers.

New York pizza – it resembles a Neapolitan pizza. The dough is fragile but at the same time flexible enough to make a piece of pizza in half. The pizza ingredients are sausage, pepperoni, mushrooms, oregano, red pepper flakes, parmesan and garlic powder.

Sicilian pizza – a rectangular pizza with a spongy consistency. Covered with tomato sauce, onion, herbs, anchovies and sprinkled with breadcrumbs. Most often it is served at Christmas and New Year’s Eve. However, in America, the Sicilian pizza is served throughout the year and consists of tomato sauce and mozzarella.

Greek pizza – was invented by Greek immigrants who came to America. It is not made up of Greek supplements, nor is it consumed in Greece. The dough is not as thin as in a New York pizza, nor as spongy as in a Sicilian pizza. Tomato paste, oregano and a mixture of mozzarella and cheddar cheese are used as additives

Californian pizza – there is a large freedom of additions, you can use mustard, ricotta, pate and peppers

Pizza can protect against cancer?

Pizza is also a source of antioxidants: lycopene, vitamin C, flavonoids, folic acid and beta-carotene, which are found in tomato sauce. Researchers have found that regular pizza consumption decreases the risk of developing esophageal cancer by 34% by 34% and 26% by colon cancer, which is due to the lycopene present in tomato sauce. However, the study was conducted on the Italian population, where the pizza is slightly different from that common in other regions of the world. In addition, the Mediterranean diet was indicated as one of the additional factors reducing the risk of cancer.

In addition, pizza can be a good source of vitamins B1, B2, niacin, vitamin A – depending on the additives used.
