Water is essential in all cells of the human body. Without it, there is no life, and its lack in a few days can lead to death. Insufficient hydration of the body disturbs its balance and leads to many disorders of health. There is still much talk about the negative effects of coffee and tea on the body’s water management. Are coffee and tea dehydrating?

 Proper hydration of the body
Water is the most important inorganic ingredient in the body. It performs many important functions, including supports metabolic processes, facilitates the movement of fecal mass, cleanses toxins, transports organic and inorganic components to all cells and regulates body temperature.

The demand for water depends on many factors, i.e. age, sex, weight or fat content. The body needs more fluids along with increased physical activity and increasing ambient temperature, which is caused by additional loss of water along with sweat. Because water is involved in metabolic processes, the demand for this ingredient increases with the increased energy value of the diet. Also, particular macronutrients are important because a large amount of protein in the daily diet contributes to increased diuresis.

The water level in the body should always be at the same level, i.e. the water balance must be zero. This means that the amount of water supplied with liquids and food and arising in the combustion processes should be equal to the amount of water excreted in urine, feces, and then exhaled air.

 Dehydration of the body – symptoms
The body cannot store water. Therefore, its lack in the diet quickly leads to dehydration. The first symptoms are already present with a 1% water loss. There is then a decline in physical performance, reduced thermoregulation and a lack of appetite. With increasing dehydration, there are problems with concentration, headaches, drowsiness, nervousness, increased body temperature, and respiratory rate.

Coffee and tea as a source of water
The source of water for humans is drinking water, various types of beverages and food products. Coffee ranks second in the ranking of the most frequently consumed beverages.

The US Department of Agriculture (USDA) issued a statement recommending the intake of liquids without added sugar to reduce its amount in the diet. However, he does not pay attention to diuretic drinks, such as coffee and tea. The US Food and Drug Administration (FDA) recommends that healthy adults consume no more than 400 mg of caffeine per day, which is about 3-4 cups of coffee a day.

Do coffee and tea have a dehydrating effect
A popular myth about the allegedly draining effect of coffee and tea is based on the presence of caffeine in their composition. Caffeine is a natural substance that occurs in coffee, tea, and cocoa. This substance inhibits the reabsorption of sodium in the kidney tubules, and consumed in large doses (> 500 mg) has a diuretic effect.

The first study conducted by Fisher SM et al. On the diuretic properties of caffeine showed that regular consumption of this compound may contribute to the body’s specific tolerance to this substance. Besides, further research confirms that moderate consumption of caffeine does not contribute to significant dehydration of the body.

The purpose of one of the studies conducted by Grandjean A. et al. Was to determine the effect of various drinks, including caffeine, on the hydration status of the body. The study involved 18 men aged 24-39 who drank various caffeinated drinks, a total of 624 mg per day. The loss of water was determined by determining the amount of urine output. In men, there was a decrease in total body water by 2.7% and an increased urine output by 42%. Because the project participants consumed caffeine drinks every day, and 5 days before the study eliminated caffeine from the diet, the test results should be interpreted very carefully. Also, the authors themselves do not confirm the dehydrating effect of caffeinated beverages.

On the other hand, studies carried out by Killer SC, Blannin AK and Jeukendrup AE did not show the drainage properties of coffee. The study involved 50 men, who usually drank 5-6 cups of coffee a day. The experiment was divided into 2 trials, each of them lasting 3 days. During the study, men consumed 4 times a day 200 ml of coffee, which contained 4 mg of caffeine per kilogram of body weight or in the same amount of clean water. The physical activity of the participants and the solid and liquid food they eat were monitored throughout. The level of hydration of the body was tested before and after each trial. The study did not show statistically significant differences in the hydration of the body between coffee consumption and the consumption of clean water.

In the context of the dewatering effect of tea and coffee the most important is the dose, which was confirmed by the study of Seala AD et al. The researchers showed that the consumption of 6 mg of caffeine per kilogram of body weight per day can cause a diuretic effect, while 3 mg/kg bodyweight does not disturb the water balance in body.

In 2015, the European Food Safety Authority issued an opinion according to which the dose of caffeine above 6 mg/kg body weight per day does not contribute to the disturbance of the body’s water manage

The caffeine content in coffee and tea
Tea leaves contain 4.5% more caffeine compared to the amount of caffeine in coffee beans that contain a maximum of 2.5% of this compound. However, in the production of tea, the amount of caffeine decreases. The caffeine content in tea depends on the variety, growing conditions, degree of fermentation, type and brewing method. Namely, 100 g of black tea contains 2.8-3.8 mg of caffeine, whereas green tea only 1.0-2.1 mg of this substance.

The caffeine content in coffee also varies and depends on the type of coffee, the production process, and the brewing method. Robusta coffee contains twice as much caffeine as arabica coffee.

To sum up, to make tea and coffee dehydrating, drink on average 10 cups of black tea or 5 cups of brewed coffee per day.

In the first group, where participants consumed products containing green tea, IGF-1 increased by 24%, while in the second group by only 15%. People who used green tea products lost weight three times as much as the subjects who used the placebo.

After this time, it is necessary to separate the leaf, i.e. grounds from the infusion. For brewing, use only soft water, rich in oxygen. The most harmful component of water for tea infusion is calcium. 

Mineral water is excellent for drinking, but it is not suitable for brewing tea or coffee. Do not use distilled water. For brewing, use only clay-coated teapots, porcelain or glass. Aluminum or iron teapots will spoil its taste and smell. Dry the tea in a pre-warmed teapot with water at the moment when tiny bubbles appear on its surface. If we want to drink a good tea, do not let it boil. The boiling causes the oxygen contained in the water to be released rapidly. It is possible to brew two or three times. Each time we will find a different taste. The length of brewing tea depends on its effect. At the beginning of the teina, only after 3-5 minutes, polyphenols, commonly called tannins, are released. These ingredients neutralize the action of teine, so after 7 minutes of brewing, the infusion can be completely free of tein and no more stimulant. In this brew, however, there is a lot of tannin.

Rooibos – properties and application. The way of brewing rooibos tea.

 

Rooibos is a shrub from South Africa, it has been known in Europe for 100 years. Its leaves are processed like tea leaves and used to drink in the form of a brew. Rooibos has a mild, sweet taste and amber color. It has a wide therapeutic use mainly due to the presence of antioxidants. 

Rooibos, or African Raspberry (Aspalathus linearis), is a plant growing in South Africa in the Cederberg Mountains, which are about 300 km from Cape Town. The natural habitats of the plant have been used to organize large-scale cultivation and now there are rooibos plantations in this area. It is an area unfriendly to other plants, characterized by sandy soils and very dry summers. Due to the fact that rooibos has been growing there ever since, there is no need for fertilizers or parasitic agents. It is possible to call rooibos tea, however, this shrub is not related to tea bushes. The plant reaches a height of 1-1.5 m. The leaves of rooibos are narrow and oblong, have the shape of needles. They are usually collected in the middle of summer, in January, and then cut into 2-3-millimeter needles. 

How is rooibos created? 

Like tea, rooibos can be fermented. For this purpose, moistened leaves are poured into 20-cm heaps and left for a few days in a warm place. During this time, rooibos turns red and brown. The leaves are then dried in the sun to a moisture content of 10%. 

In the world, the red rooibos being fermented is more known, but also green. 

Rooibos has been known for generations in South Africa. He came to Europe only in 1904 thanks to the Russian merchant Benjamin Ginsberg, whose family was involved in the sale of tea. In Africa, rooibos also drank Dutch settlers who treated the brew as a substitute for expensive black tea. The popularity of rooibos increased after 1930, when Dr. Peter Le Fras Nortier – surgeon and botanist – began to experiment with the cultivation of the plant. 

 

Rooibos – brew and the way of serving 

Rooibos is brewed for 4-5 minutes with water at 95 degrees Celsius. A teaspoon of tea is used for one cup of water. Rooibos can be bought in leaves and bags.

It is used with other herbs as a basic or additional ingredient. You can buy rooibos flavored with strawberry and vanilla, less bergamot or the addition of spicy spices. It is also found in blends with black and green tea. Rooibos tastes good served with milk and sugar. You can drink a cold and hot infusion, with the addition of fruit juices, giving a refreshing effect and honey, emphasizing the natural aroma of the infusion.

The composition of rooibos 

Fresh rooibos leaves are rich in vitamin C. The tea contains no caffeine and is characterized by a low content of tannins, which hinder the absorption of micro- and macroelements. In a 200-ml glass of rooibos infusion potassium (7.12 mg), sodium (6.16 mg), magnesium (1.57 mg), calcium (1.09 mg), as well as fluorine, copper, iron, manganese are found. and zinc. 

Rooibos is primarily a source of antioxidants for polyphenols, flavonols, dihydrochalkons, aspalathin and nothofagin. The processed leaves contain cinnamic acid and benzoic acid, which has a bactericidal and fungicidal effect.

Rooibos – healing properties 

Rooibos has been appreciated in folk medicine for many generations, and now its health properties are confirmed by scientific research. It can be used in many areas of treatment and is recommended to all people who care about health and good shape. 

It protects against free radical attacks. The infusion of rooibos is rich in antioxidants, which inhibit the action of substances with oxidative activity, penetrating into the body from the environment and produced by cells as a result of physiological processes. Antioxidants act protectively against DNA and cell proteins, preventing adverse changes and mutations. 

It lowers blood pressure. Rooibos is known to relieve stress and nervous tension and the associated increased blood pressure. 

It has a beneficial effect on the circulatory system. The better functioning of the cardiovascular system in regular rooibos drinkers is due to the presence of antioxidants, as well as the inhibition of angiotensin converting enzyme, which is a risk factor for heart disease. Among these people, there was also a lower mortality rate due to cardiovascular events, but the exact mechanism of the phenomenon was not known. 

It helps in type II diabetes. The antioxidant of aspalathin found in rooibos infusion has beneficial effects in the case of type II diabetes. It balances blood sugar, increases the sensitivity of tissues to insulin, improves the use of glucose by the muscles and affects the secretion of insulin by the pancreas. Rooibos can be used in the prevention of type II diabetes and in patients who are ill to improve their condition and prevent blood glucose surges. Glucose tolerance in subjects with type II diabetes has improved after only 5 weeks of regular rooibos infusion. 

Supports liver regeneration. Studies in mice have shown that the daily use of rooibos in amounts that can be normally drunk by humans accelerates liver regeneration. 

Relieves colic in children and abdominal pain. The infusion of rooibos has traditionally been given to small children in the case of collections. It was mixed with a small amount of milk to improve the taste. Rooibos can also be used in adults in the case of stomach pain and stomach upsets. Already one cup relieves discomfort. For this action probably corresponds to the anti-inflammatory quercetin present in rooibos. In addition, the tea has diastolic properties, prevents diarrhea and other intestinal ailments. 

It has anticancer activity. Drinking rooibos reduces the risk of cancer due to the content of antioxidants. Extracts from this tea can be used in combination with drugs in the case of cancer. 

Supports the treatment of skin problems. Rooibos is helpful in the case of rash, eczema, acne, irritation, dry skin and sunburn, as well as chafes in young children. It protects the skin against premature aging and wrinkles. It can be used as a wrap. The favorable properties of rooibos are due to the presence of alpha-hydroxy acids and zinc. 

It has a beneficial effect on the respiratory tract. In folk medicine, rooibos is used for respiratory problems, such as asthma and bronchitis. Studies in rats have confirmed bronchodilatory and coughing activity, which gives grounds for respiratory diseases.

There are ongoing discussions about how long it should be brewed to get the maximum therapeutic benefit. Studies show that brewing time shorter than 5 minutes extracts only 20%. catechin polyphenols.
